White Chili is up next in the Autumn Soup Series by Martha. This is a fun twist to the average brown/beef chili. It seems more elegant and creamier. I really like the taste of the white northern beans combined with the chicken.

Here is the recipe below as shared by Martha. Mine came out a little different because I failed to read the recipe all the way through before just dumping everything into the crock pot, oops! It still tasted great but I’d like to go back and see if they chicken has more flavor if I saute it with the onion and garlic (which I also didn’t get to add b/c of a toddler who doesn’t believe in naps!). I also didn’t put in as much cheese as too much cheese doesn’t settle with our tummies very well. Have you ever had White Chili? What are some of your favorite White Chili recipes?

 White Chili

 Soup Ingredients
3 cans northern white beans
6 cup chicken broth
1 tsp. chicken bouillon
¾ large onion, chopped
1 Tbsp. oil
6 cloves garlic, minced
½ can Ro-tel diced tomatoes with green chili peppers
3 tsp. ground cumin
2 tsp. dried oregano
1 1/2 tsp cayenne pepper (I didn’t have this so I added 1 tsp of chili powder instead)
4 cup cooked chicken, diced
1 cup sour cream
3 cups Monterrey jack cheese, shredded (I only had mozzarella, which does NOT substitute well!)

For serving ingredients:

  • Sour cream
  • Green onions
  • Cilantro chopped
  • Tomatoes chopped

Combine beans, broth, and chicken bouillon in a large pot. Simmer covered for 20 minutes.
Sauté onion and garlic in oil until golden, add this, ro-tel, cumin, oregano, cayenne pepper and chicken to the bean mixture. Simmer for 30 minutes,
Add sour cream and cheese and heat until cheese melts.

Serve with sour cream, green onions, cilantro and chopped tomatoes or any other topping of your choice.

May be frozen before adding sour cream and cheese.

Today is the last day to enter the Catholic Book of Saints for Catholic Mom’s GiveAway! I will announce the winner Tuesday morning!

For now, here are some pictures of a few things I’ve recently enjoyed doing with the kids; Simple, yet forever moments.

First, a few months ago…or maybe a year…or two(?) I picked up this Dino capsules in the $1 bins at Target.

So the other day, I threw my laptop out the window and sat down with the boys to do this.

I haven’t seen them so quiet for so long while being so close together in…well ever. It was wonderful.

And they even played together with them for a little bit (1-2 minutes).

Then, I had a fun “hair salon” night with my daughter. My friend, Michelle, pinned this onto her Pinterest the other day and I was excited to try them on her hair. Miraculously the boys played nicely and quietly (no screaming or fighting) while I played with her hair.

I love these kids so much and am thankful for these simple moments together.

Next up in the Autumn Soup Series by Martha is her famous Taco Soup! This has been a favorite of mine for a while. It is super easy to make and is always a real crowd pleaser too. A couple of bowls of this soup will recharge you after a long day and everyone can have some fun choosing their own soup accessories like sour cream, shredded cheese, tortillas, avocado slices, etc! Sorry there is no picture for this one yet. I tried taking several, my husband thinks I might have tried a little too hard, but they all ended up looking very unappetizing so for now you’ll just have to cook up a pot of your own to see what it looks like. Have fun and enjoy!

TACO SOUP Adapted from Mary K Stillwell

Serves 12

Ingredients

  • 2 pounds ground beef
  • 1 onion, chopped
  • 1 pkg. taco seasoning mix (see
    note)
  • 1 pkg. Ranch dressing
  • 1 can pinto beans (I exchanged black beans for these today and it was still great!)
  • 1 can red beans
  • 1 can green chilies (optional
    if you do not want it spicy)
  • 1 can hominy
  • 2 cans diced tomatoes
  • 1 small can of corn
    (optional)
  • 1-2 cans of water (oops I forgot this today and it was fine with all the other juices)
  • 1 bag tortilla chips (I fried some corn tortillas in coconut oil and that was yummy)
  • 1 pkg. grated Mexican cheese (if you’re not into cheese, the soup really tastes fine on it’s own without any!)
    (Kraft has one) or Monterrey Jack Cheese
  • Sour Cream

Brown beef with onion, drain.  Add taco seasoning, Ranch dressing
and stir. Add rest of ingredients except for chips, cheese and sour cream.  Stir all together and let it simmer until the soup is well heated. May also be cook in
crock pot on LOW until heated through, 4-6 hours.

Notes: Taco seasoning mix: you could add your own seasoning so that is not too spicy. The basic recipe for Taco seasoning is as follows and you can make less hot or add a few of the spices:

  • 1 tablespoon chili powder
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon crushed red pepper flakes
  • 1/4 teaspoon dried oregano
  • 1/2 teaspoon paprika
  • 1 1/2 teaspoons ground cumin
  • 1 teaspoon sea salt
  • 1 teaspoon black pepper

Instructions: In a small bowl, mix together chili powder, garlic powder, onion powder, red pepper flakes, oregano, paprika, cumin, salt and pepper. Store in an airtight container. Season to taste.

I received mine a few weeks ago and really like it! I’ve always enjoyed reading about the lives of Saints, it helps inspire me and strengthen me in my own life and journey to holiness. But sometimes it is hard to read about the Saints lives and know how to apply their saintly wisdom to my own simple life. Life is very different now than what it was like for many of the Saints that lived decades and even centuries before us.  It can also be overwhelming to try and read a whole book about one saint and I know there are many great Saints out there who I have never even heard of yet.

With Lisa’s book, you can read a little bit about one saint per week, or every other week, or per month or however often your life (and children) let you. Each week you’ll learn about some of Lisa’s favorite saints that have supported her emotionally, intellectually, physically, and spiritually. With each Saint, she shares the Saint’s Story in one or two pages, offers some Reflection prompts, provides some suggested Traditions and devotions to go along with the Saint, provides some Wisdom with a quote from the Saint, daily Scripture verses to help you pray during the week in connection with the weekly Saint’s theme, and then even presents some “Saint-Inspired Activities” to do for “Mom” and “With Children”. A daily Prayer for Our Family and Something to Ponder help bring it all together each week. By the end of the week, you’ll know more about a new Saint that you may not have known about before. For example, the second week I learned about a Saint I either never knew about or had unfortunately never paid attention to until now: Saint Zita of Lucca who teaches us about “Diligence in Domestic Tasks”. She is the patronage of “Homemakers, Domestic Workers, Servers”. Here is an excerpt from “Lessons from Zita”

“Domestic responsibilities are on every mom’s ‘to do’ list, no matter how much time she spends at home. For the most part, I tend to dread seeing items such as ‘clean boys’ toilets’ or ‘go to the market’ on my list of chores. I’m not one of those women who is by nature a gifts domestic. My husband has put up for years with a wife who’d rather blog than bake and who’s better at coding than cooking.

But learning about the life of Zita of Lucca has given me a new take on my attitude about household duties. The Reverend Alban Butler wrote of Zita that she fully embraced her domestic position as a gift from God. Zita saw all works as a form of penance for sin, and she was therefore happy to be in a position to serve the God she loved so greatly. She saw her constant obedience to her employers as a sign of her obedience to the will of God. For her, work and prayer were interchangeable, and a constant rhythm of devotions accompanied her day. Learning about Zita’s attitude hasn’t exactly made me joyous to see overflowing mounds of dirty laundry, but it has reminded me that my station in life is a blessing. With my work around the house, I serve not only my husband and sons but also the God who has gifted me with shelter, with comfort, with sustenance, and with the love of my family.”

A book of Saints for Catholic Moms could be a great daily devotional for yourself and for your family. It could also be a great gift-idea for a new mom or even a friend who is intrigued with the lives of the Saints and wants to learn more in bite-sized pieces. I think this book could also work for a group of Catholic mothers who meet monthly or weekly even. There are many possibilities and I am thankful to Lisa Hendey for taking the time to share her favorite Saints with us in such an easy-to-read and relatable manner.
