Meatball Sub Sandwich

Here’s another recipe from the Better Homes and Gardens Slow Cooker Magazine. The Saucy Meatball Sandwiches recipe can be found on page 88. Online I found a different BH&G Saucy Meatball Sandwiches recipe you might also like.

I used the French Baguette recipe in Betty Crocker’s Best Bread Machine Cookbook for the bread. (I was so proud of myself for making my own instead of just running to the store for one and it was much softer and tastier this way.) By the way I would highly recommend this bread machine cookbook and I would even highly-er (?) recommend buying it through my link there so I can earn a some extra $ for books I’d like to get) 😉

Homemade French Baguette

For this recipe, though I can’t share it in full, I’ll tell you that you can use any basic meatball recipe you like with beef, turkey or pork or whatever you like; then just cook the meatballs in your crockpot, along with some onion wedges, pepper quarters and diced or stewed tomatoes, for 4 – 5 hours on low or 2 – 2 1/2 hours on high after you have browned them a bit first.

For the sauce, blend the onions, peppers and tomatoes together and cover your meatballs with that on the sandwich instead of the regular ol’ pasta sauce. I added swiss cheese also and the recipe suggests dressing the sandwich up with some pretty basil leaves but who I didn’t have any handy.

I would give this recipe a 4 star only because the sauce wasn’t as tasty as “regular ol’ pasta sauce”. Oh and be prepared to drape your kids in napkins with towels on the floor because it’s very messy. 🙂
