Tortilla Casserole

This is by far one of my favorite dishes. It’s simple, it’s cheesy, it’s got tortillas, it’s yummy and easy to dress up. It’s also a great freezer-meal dish! (which I need to get started on!) Here’s the basic recipe.

You’ll need some ground beef. You can season it as the recipe suggests or just add in some taco seasoning too. I do it differently every time.

Shredded cheese, I like the Colby Jack but cheddar would be good too or even some Pepper Jack for an extra kick.

Fry some corn tortillas in your choice of oil/butter.

Then start the layering in your baking dish with some salsa on the bottom and then a layer of the fried corn tortillas.

Then you’ll add the beef, sprinkle on the cheese and then start again with a layer of tortillas and some salsa.

Top it with the cheese and you can also add some salsa before you cover the dish with foil.

Bake with the foil on for about 10 minutes and then another 10-15 minutes more without it and voilà!

Then you can dress it up with some sour cream, tomatoes and avocado slices or guacamole.

My guacamole “recipe” changes each time I make it. As long as you have some avocados, salt and lime you’re good to go. Here is a really delicious one my friend Sarah makes.

  1. Mmmmm, I’m going to have to try this. By frying the corn tortillas, does it keep them from getting soggy? Have you ever tried it with WW flour tortillas?

  2. Sounds good, I think I’m just going to use corn tortillas though, I put them on the grocery list so we’ll just do that.

    Completely unrelated, but speaking of grocery lists…Aldi has 100% Maple syrup in an 8oz jar I think (ish) for under $5, which is a heckuva good price. Aaron said it looked like a new item they’d be keeping in stock!!
