Apple Bundt Cake

Recipe courtesy my friend, Michelle:

Apple Bundt Cake from Better Homes and Gardens (I looked everywhere for their recipe online but couldn’t find it so here it is below. Visit their site for more delicious-looking ideas!)

2 beaten eggs
3 cups all purpose flour
2 tsp lemon zest
1 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
¼ tsp allspice
¼ tsp salt
1 cup white sugar
1 cup packed brown sugar
1 cup cooking oil
1 Tbsp. vanilla extract
3 cups chopped peeled apples
1 cup chopped pecans toasted {I used walnuts}

1. Allow eggs to stand at room temperature for 30 minutes. Meanwhile, grease and lightly flour a bundt pan. In a medium bowl stir together flour, lemon zest, baking powder, baking soda, cinnamon, allspice, and salt: set aside.
2. In a mixing bowl combine white sugar, brown sugar, oil, eggs, and vanilla. Beat with an electric mixture on medium for 2 minutes. Add flour mixture and beat on low speed just until combined. Fold in apples and pecans. Spoon batter into pan.
3. Bake in a 350 oven about 1 hour or until a wooden toothpick inserted near the center comes out clean. Cool cake on rack for 10 minutes. Remove from pan. Cool thoroughly on wire rack. Sprinkle with powdered sugar. Cover, store in refrigerator.

  1. Thank you so much for posting this! It’s my favorite apple cake recipe and I also scoured the net for it after mistakenly giving away my New BH&G cookbook. Yay!!!
