Deviled-Egg Salad Sandwich

Eggs (1 per adult or older kid is usually what I do and 1 per 2 small children)

Mayonnaise

Honey Mustard

Paprika

Salt and Pepper

1. Boil eggs and peal them after they cool

2. Run eggs through a food chopper or just crumble them by hand or with a fork

3. In a small bowl, mix the crumbled eggs with desired amounts of mayo, mustard, paprika, salt, and pepper.

4. Serve with your choice of bread and enjoy!

I love books and love sharing and discussing them with others. i’m not sure if I would rather find good food or a really mind-provoking book if I were stuck on an island. I added an amazon bookshelf on my sidebar From time to time I hope to share reviews or excerpts from my favorites.  If I so inspire you to purchase a copy of your own, and if you click on the links I provide or the pic in the bookshelf, I may get a referral cut.  I’m not trying to make money off any one (lesson learned already on that account) but if you’re going to buy a certain book anyway, just keep this in mind. :)

I’m so glad I know that eggs are actually good for me.  Especially when they come from hens who get it all the gooey worms and little critters they can peck from their non-concrete surroundings. 

I also really like bread and have taken more of a fancy to ham as my gallbladder issues have sort of calmed down.  For some reason I didn’t think of putting them together until my good friend and extremely talented photographer posted this mouth-salivating picture on his photo journal

He told me I could share it but I’m going to make you go to his blog to see the picture and then you can get lost in his breathtaking world of photographic magic. 

I was hoping to post about the home-made pasta I made today but well let’s just say pasta is one thing that makes me very thankful I live close to the grocery store!

I have been less than creative with my meals lately.  Did I even eat today? So for this Tasty Tuesday I’m going to give you my homemade mayo recipe. Did I already do this?  I know it is in my recipes but can’t remember if I actually made a post about it yet.

I love mayo

I use mayo

chicken salad,poppy seed dressing, delightful sandwich spread

My kids love mayo

“Yay!! Mayonnaise!!”

Alright if you stuck with me through that here is the recipe

Mayonnaise in Cuisinart Processor

 1 Egg

1/3 cup oil  (I used safflower oil)

2 Tb Vinegar (white preferred)

1 tsp Sugar

½ tsp dry mustard (optional)

½ tsp Salt

 Put all ingredients in food processor and mix well.  Then as the processor is still on, slowly pour in 2/3 cup more of oil. 

 Makes around 1 cup of mayo
