A few weeks back we had a delicious dinner with some wonderful friends. I made the fajitas and they (well she did anyway) made a rather delicious southwest salad and dressing. We actually used the dressing in the fajitas too and it added a savory touch.
Here is the recipe my friend shared for the dressing:
- 1/4 c. ranch dressing
- 1/2 c. sour cream
- 1 ts. apple cider vinegar
1 -1 1/2 ts. lime juice - 1 ts. chili powder
- 1/2 ts. each of onion, garlic, cumin
- 4 ts. water
Mix it all together and chill.
The salad is as follows:
- About 4 c. lettuce
- 1 c. chopped cherry tomatoes
- 1/4- 1/2 c. chopped green onions
- 1 can rinsed black beans
- 1 c. frozen corn, thawed and drained
- 1 c. colby/ jack cheese
- 2 avocados, diced
