Southwest Salad and Dressing

A few weeks back we had a delicious dinner with some wonderful friends. I made the fajitas and they (well she did anyway) made a rather delicious southwest salad and dressing. We actually used the dressing in the fajitas too and it added a savory touch.

Here is the recipe my friend shared for the dressing:

  • 1/4 c. ranch dressing
  • 1/2 c. sour cream
  • 1 ts. apple cider vinegar
    1 -1 1/2 ts. lime juice
  • 1 ts. chili powder
  • 1/2 ts. each of onion, garlic, cumin
  • 4 ts. water

Mix it all together and chill.

The salad is as follows:

  • About 4 c. lettuce
  • 1 c. chopped cherry tomatoes
  • 1/4- 1/2 c. chopped green onions
  • 1 can rinsed black beans
  • 1 c. frozen corn, thawed and drained
  • 1 c. colby/ jack cheese
  • 2 avocados, diced
