Well now that there are only 2 weeks left of Lent, I’m finally going to contribute my own “Meatless Meals for Lent” idea.
It’s fairly simple – only 3 main ingredients – and nothing really that spectacular but I liked it and you might too.
Salmon Salad {Lettuce Wraps}
All you need is:
One can of salmon (I used Alaskan pink salmon)
Half a cup of mayonnaise
1 teaspoon of salt
{Lettuce}
Directions:
Dump all of salmon into a big bowl. Add the mayo & salt. Mix well until all incorporated to your liking. Scoop onto some lettuce leaves. Wrap, bite, crunch, enjoy !
You could also use this as a dip with crackers or on pita bread or in a croissant with other accessories such as cut up grapes, raisins, cranberries, celery, carrots, and more!

I don’t care much for it either but every now and then find a way to stomach it. 😉 The only thing I really like is tilapia and this or tuna salad, but not too often.
